Methode : wash chiken bone,pour water into stock
pot,add mirepoix and simmer (2 hours),add baquet garni,,,
2. Brown
stock :

Beef bone
·
Mirepoix(onion,carrot,celery)
·
Baquet garni(thyme,bayleaf,black
peppercorn,leek,parsley)
·
Tomato paste
·
Water
·
Olive oil/salad oil
·
Red wine
Methode : saute beef bone untill brown color,saute
mirepix until brown add tomato paste and red wine,pour water,add baquet
garni,,simmer for 7-8 hours
3. Fish
stock ;

Baquetgarni(tyme,bayleaf,blackpeppercorn)

Whitewine
Methode : saute mirepoix with butter add wine,add
fish bone,pour water and baquetgarni simmer for 1hours
