Jenis jenis kaldu (Kind of stock)


Kind of stock ;
·         Chiken stock
·         Fish stock
·         Brown stock
·         Vegetable stock
·         Beef stock
1.      Chiken stock  :
·         Chiken bone
·         Baquet garni
·         Mirepoix
·         Cold water
·         Salt
Methode :  wash chiken bone,pour water into stock pot,add mirepoix and simmer (2 hours),add baquet garni,,,

2.      Brown stock :
·         Beef bone
·         Mirepoix(onion,carrot,celery)
·         Baquet garni(thyme,bayleaf,black peppercorn,leek,parsley)
·         Tomato paste
·         Water
·         Olive oil/salad oil
·         Red wine
Methode : saute beef bone untill brown color,saute mirepix until brown add tomato paste and red wine,pour water,add baquet garni,,simmer for 7-8 hours
3.      Fish stock ;
·         Fish bone
·         Mrepoix(onion,leek,celery)
·         Water
·         Baquetgarni(tyme,bayleaf,blackpeppercorn)
·         Whitewine
Methode : saute mirepoix with butter add wine,add fish bone,pour water and baquetgarni simmer for 1hours

4.      Beef stock :
·         Beef bone
·         Water
·         Mirepoix(onion,carrot,celery)
·         Baquet garni(thyme,bayleaf,leek,black peppercorn)
Methode : wash beef bone,,pour water into pot stock,add beef bone,,add mirepoix,,and the last add baquet garni ,,simmer
